Strawberry Chia Pudding
It’s the 5th of January – all the non-clean treats have (or should have) finished, but you still want a little something right? This little chia pudding with fresh strawbs will do the trick nicely. Insanely quick to make, I put a batch in the fridge before I started work today to have something cold and delicious to look forward to tonight. Works with any fruit, but I couldn’t go past the super ripe strawberries today! Enjoy.
SERVES 4
Ingredients
1 cup coconut milk (full fat)
1 punnet of strawberries
garnish with
2 extra strawberries, sliced
2 tablespoons slivered almonds, toasted
drizzle of real maple syrup (if you need it!)
Method
Mix the chia seeds into the coconut milk, add the lemon zest and mix well.
Roughly cut the strawberries and stir in. Pour into 4 small glasses (or 2 big), cover and put in the fridge to chill – at least an hour.
When you’re ready to serve, top with the sliced strawberries, the toasted almonds and a drizzle of maple if you need it!
