Coconut & Blueberry Morsels
Delicious little morsels which will satisfy your sweet, creamy, salty cravings all in one hit!
Full of the goodness of coconut, these morsels are great to take care of those afternoon hunger pangs, pop one of these and you are good to go until dinner time! Experiment with different freeze dried fruit — raspberries and plums are super delicious too. These are best eaten chilled, I store them and eat them straight from the freezer — deeeevine!
MAKES 20-22
Ingredients
50g dark chocolate
1.5 cups coconut chips
85g coconut oil
85g creamed coconut (coconut concentrate, coconut butter)
1 teaspoon vanilla extract
pinch of flakey salt
1/2 cup freeze dried blueberries (or any freeze dried fruit)
Method
Roughy chop the chocolate and put into a cup, microwave for 30 seconds at a time until melted. Spoon about a teaspoon full into each silicone mold (I use the small ice cube ones) or mini paper cupcake wrappers. Try and cover each of the bottoms evenly.
Put the remaining ingredients, apart from the blueberries, in a food processor and blend for a good few minutes until mixture is creamy. Add the blueberries and pulse for a few seconds — it’s nice when there are still a few chunks in each morsel.
Spoon the mixture into the molds or wrappers and put into the fridge to set.
Pop the morsels out of the molds when they are set and store them in the fridge — share with friends!

Hey Mattie — yes, sorry I had to take a couple of recipes down due to the fact I included them in my Cookbook and there was a copyright issue — it’s available in my book if you are desperate for it :-)
