Blood Orange Rocket Salad
You’ve probably guessed by now that I LOVE rocket – and this simple little salad does not disappoint! Of course you’re not going to be able to always find blood oranges* so replace with regular oranges or grapefruits, or a mix of both YUM!
SERVES 4
Ingredients
1 bag baby rocket
handful of kale leaves
3 blood oranges*
handful of pistachio nuts (I have big hands ;-)
Dressing
3 tablespoons olive oil
2 tablespoons blood orange juice
couple of grates of blood orange zest
pinch of flakey salt
ground black pepper
Method
Toast pistachio nuts in a small frypan – watch carefully! Shake frypan to toast both sides, then when done, leave to cool.
To make dressing, grate a bit of zest of one of the oranges into a small bowl, juice half an orange and add the oil, salt and pepper – set aside until just about to serve.
Put rocket into a salad bowl/plate. Finely slice the kale and add mix through. Slice the peel off the rest of the oranges and cut in segments or rounds. Throw orange on top of the leaves along with the nuts and give it a bit of a toss.
Just before serving whisk the dressing vigorously until it comes together and thickens slightly (you’ll know it when you see it – will only take a few seconds). Pour over salad.
