Seriously quick to make, seriously delicious to eat!

Aaaaah fennel, your aromatic taste is so unique, your texture so crunchy, I think I love you! Seriously though (actually that was pretty serious) if you haven’t tried fennel, now is the time! It can be a bit of a love/hate relationship by the sounds, luckily our household is in love — including our little non-vege eater who, most surprisingly, chooses fennel over carrots every time. When she came into the kitchen one night and asked me to make her a rocket and fennel salad for dinner … I fell to the floor in mock shock — needless to say, she was not amused. So you never know until you try it, and don’t automatically discount your kids from liking its strong flavour — you may even, with time, get requests!

SERVES 2-4

Ingredients

1 large fennel bulb
1 large green apple

dressing

2 tablespoons olive oil
2 teaspoons white balsamic vinegar (or lemon juice)
pinch of cinnamon
pinch of flakey salt

garnish with

micro greens (I used radish and snow peas)
fennel fronds (feathery green bits from the top of the fennel bulb)

 

Method

Slice the fennel finely with a mandoline or with your best ‘Masterchef knife skills’ and place in a large bowl.

Slice the green apple into thin strips and add to the fennel.

Whisk the dressing ingredients in a small bowl and drizzle over the greens and toss gently to combine.

Garnish with micro greens if you have them, and / or fennel fronds.
